Spicy Fried Chicken

I won’t lie, I was very hesitant to try making homemade fried chicken.  I have heard many stories about the chicken not cooking fully or the breading falling off in the oil.  Thank goodness, I didn’t have either of these issues with this recipe!  Believe me–this is an extremely simple recipe!!


  • Chicken Drumsticks (or wings, etc.)
  • Buttermilk (fill bowl high enough to dunk drumsticks)
  • 1 cup flour
  • 2 Tbs red pepper flakes
  • 1 Tbs paprika
  • 1 Tbs garlic powder
  • Salt and pepper, to taste
  • 1 qt. oil for frying

1. Heat oil to about 375 degrees.  {We were lucky enough to receive a miniature deep-fryer as a wedding gift, but you can also use a pot and oil heated on medium-high. Use a meat thermometer to test each piece of chicken after frying to make sure it is cooked thoroughly!}

2. Begin by salt and peppering your drumsticks.  Add a little garlic powder to your chicken too if you would like (I did!).

3.  Fill a gallon-sized ziplock bag with flour, red pepper flakes, paprika, garlic powder, salt, and pepper. Shake to mix.

4.  Dunk each drumstick individually into a bowl of buttermilk, making sure to cover it completely.

5.  Place each drumstick individually into the bag of flour/seasoning and shake to coat it.

6.  Set drumsticks on cookie sheet. Place cookie sheet with all of the seasoned chicken into the refrigerator for about 10 minutes.

7.  After chilled, place chicken in oil and fry for about 15 minutes.  It helps if you have a basket or long tongs to set and retrieve the chicken from the oil without having to place your hands near the hot oil.

8. Remove the chicken and set them on a paper towel-lined plate to drain any excess oil.

9. Enjoy your Spicy Fried Chicken!
