Easy Cheez-It Crusted Chicken RecipeTo avoid going to the grocery store today, I needed to use some of the {very few} ingredients that I have left in my pantry.  I wanted something crispy, yet juicy, as well as tasty and filling—is that too much to ask??  Thus I came up with this new Cheez-It crusted chicken recipe.  Who knew that Cheez-its could be so crucial to a wholesome meal?

I must admit, my recipe is really only a tweak to Brandon’s (and Brandon’s mom Becky’s) famous pork chop recipe. I just used a different meat and a different crust! It made a completely new recipe!

Start by slicing your chicken in half to make 4 thin chicken breasts.  Place saran wrap over the chicken and beat with a rolling pin (or a meat mallet if you are lucky enough to own one!).  The slices should be about ¼-½ inch thick when you are done.

You will need three bowls to coat the chicken.  First dip your chicken in the flour/pepper bowl. Dip it in the egg and then the cheez-it/parmesan mixture.  This one is the fun bowl—you can either use a food processor or (if you have kids or tons of extra energy!) place them in a zip lock bag and crush them up! I, personally, used a miniature food processor….mainly because if I let my kid (my puppy!) crush the cheez-its, there probably wouldn’t be any left afterwards! 😉

Warm a pan with some vegetable oil—just enough to coat the bottom, but not too much! It will vary with the size of your pan, so I can’t give you an exact measurement. Once the chicken is coated, and the pan is warm (medium—I put mine on heat 6 out of 10), place the chicken breasts in the oil.  I used a screen to protect from any oil splashing up! Once the oil gets hot, it can hurt when it pops—watch out!

Flip the chicken once or twice over 8-10 mins.  I flipped mine after 4 mins on each side…and then left them on for another minute each side.  So that’s 10 mins total! I probably didn’t need to leave them on for that extra minute—I just wanted to make sure they were crispy enough.

Once cooked through (I cut my thickest one to check!), place the chicken on paper towels to cool off and drain off any excess oil.

After about 2 minutes, enjoy your juicy yet crisp and crunchy Cheez-It Crusted Chicken!  Just look at that crispy crust!

Ingredients:

  • 2 Large Chicken Breasts
  • 3 Tbs. whole wheat flour
  • ¼ tsp. ground pepper
  • 1 egg
  • 1 cup Cheez-Its (crushed)
  • 1 Tbs. Grated Parmesan Cheese
  • Vegetable Oil

Directions:

  1. Slice chicken breasts in half to make 4 thin-sliced breasts.  Beat chicken until an even thin width—about ¼ to ½ inch thick.
  2. Prepare three bowls for dipping:
    1. Bowl 1-Mix flour and pepper.
    2. Bowl 2-1 egg (slightly beaten).
    3. Bowl 3-1 cup Cheez-Its (crushed) mixed with Parmesan Cheese
  3. Dip each chicken breast in the flour mixture first, then the egg, then the cheez-its.
  4. Place dipped chicken pieces into pan with warmed vegetable oil on medium heat.
  5. Fry on each side for 4-5 mins.
  6. Once cooked through, place on paper towels to cool and drain.  Enjoy!
